The farm is a testament to the endless variety and creativity of nature, along with the hard work, care and love of the many hands who contributed to its viability. All the elements of Camino de Paz support each other to create a carefully managed and integrated ecosystem.

Goats and Goat Dairy

The farm’s lively herd of goats is at the heart of its operations, providing organic milk for a thriving goat dairy. The goats, known for their playful and curious nature, are rotated weekly through a system of pastures, and their diet is supplemented by organic hay, minerals and healing herbs, ensuring the high quality of their milk.

In late February, the joy of welcoming healthy, playful kids into the world is matched by the reward of fresh, sweet milk that follows. This rich and wholesome milk becomes the foundation for the farm’s exceptional dairy products, making the long hours and dedication of the staff truly worthwhile.

The Creamery

In the dairy, fresh organic milk is transformed into a variety of artisanal products, including several types of cheese and yogurts. In 2024, Camino de Paz was awarded a $63,000 grant by Pacific Coast Coalition Dairy Business Initiative to expand its cheesemaking skills and facilities, allowing us to develop aged cheeses and soft, ripened cheese. We are excited to explore these new lines and marry our creamery with our bakery products to make items such as mini pizzas and calzones, and cheese-filled pastries.

The Bakery

The farm’s organic artisanal sourdough bakery incorporates the art of traditional breadmaking, where time-honored techniques meet sustainable practices. Using only the finest organic ingredients, each loaf of bread and every batch of bagels is hand crafted with care, starting with a naturally fermented sourdough starter. This slow fermentation process not only enhances the flavor but also makes the bread easier to digest and rich in nutrients.

The bakery produces a variety of rustic sourdough breads, from classic country loaves to hearty multigrain and flavorful specialty options. The bagels, with their chewy texture and golden crust, are hand-shaped, boiled, and baked to perfection, offering a delightful balance of taste and tradition. Every bite reflects the commitment to quality and the connection to the farm, where most of the ingredients are sourced locally or grown on-site. The bakery’s offerings are not just food—they are an experience, combining flavor, sustainability, and a passion for the craft of baking.

Yeasted dough is formed into our baguettes, pizzas, sweet and savory turnovers. Pastry dough layered with butter – or laminated dough – is the basis of our palmier, and fruit filled Danish pastries.

Greenhouses and Fields

Here, year-round, we cultivate vegetables. fruits and herbs that we use in the bakery and creamery, as well as fresh produce to take to markets. A wide variety of greens, lettuces, and spinach fill the greenhouses in the winter, while onions, garlic, cucumbers, cabbage and tomatoes fill the indoor and outdoor spaces in the summer. Tomatoes, basil, rosemary, garlic, apples, cherries, plums, are dried or processed for use in our kitchen or to sell to yours. Our line of “value-added” foods include apple butter (made only with honey!), pesto, jams, dried fruits, sauerkraut, cajeta and dulce de leche.

Our Products

We offer the community goat and cow milk products, breads, bagels and other bakery items, preserved foods, pasture raised meats and fresh produce. We are now opening an online Buyers’ Group in addition to selling these at local farmers’ markets and food co-ops. For a $25.00 membership fee, you can order products online, pay by credit card, and have your products delivered to a central point in a location near you. In addition, members of the Buyer’s Group are eligible to attend special events held at the farm on a regular basis.
